Vegan Unicorn Poptarts
Now that the kids are out of school for the summer we have a bit more time to actually make breakfast together. We still have our mornings where the kids would rather eat a bowl of cereal or turn the kettle on to make a fast bowl of oatmeal but some mornings we turn the radio on and bust out the kitchen aprons.
My youngest, and only girl of the bunch, is obsessed with anything unicorn, pink or rainbow. Where my boys could care less what the food actually looks like, they do have fun getting their hands into it and actually making a new recipe. Today was the best of both worlds....pop tarts, unicorn colors and sprinkles, MOM WIN!
I could go into more detail explaining our love for sprinkles and decorating, how only the pink ones can go on my daughters pop tarts and how pink ones better not end up on my middle sons but we came here for food, so lets get going!
For the Dough:
2/3 cups flour
1/4 tsp salt
1/4 tsp sugar
1/4 cup cold unsalted vegan butter (you can use regular butter if you aren't vegan)
1/8 cup of water
gel food coloring (which ever colors you want but we went with yellow, blue, pink, orange and red)
For the icing:
1/2 cup of powdered sugar
1 to 2 tbsp of almond milk
1. Mix the flour, salt and sugar together in a stand mixer.
2. Add the butter....there are two ways you can do this. You can cube the butter into small pieces or my favorite way is to take the cold butter and grate it with a cheese grater. It makes small pieces and incorporates really well into whatever you are mixing it into.
3. Add in the water and mix until it forms a ball. If it seems a bit dry and wont hold together, add 1 tsp of water at a time until it forms a ball.

4. Divide the dough into balls, one ball for every color you have. Mix the dye into each ball.
5. Flatten each ball and stack the dough on top of each other. Roll the dough out to make it look tie-dyed, roll back into a ball and place into the fridge for about an hour.
6. Roll the dough out and cut out your desired pop tart shapes. Get creative! You don't have to settle for the normal rectangle.
7. Put a small amount of jelly in the middle of the bottom piece, place the top piece on and using a fork seal the edges all the way around.
8. Bake for about 20 minutes in a 400 degree oven.
9. Once they cool, mix the powdered sugar and almond milk together, ice and add sprinkles!
